How to keep the Boys from
Smoking.
It is astonishing Low unanimous
ly everybody condemns smoking, in
boys. Father, mother, uncle John,
sister Mary, and all arc alike shock

is instantly .suspected that he has

fall a victim to unnumbered vices
in the future.
Now; I don't like to see a bright
eyed .bpy.lparning to smoke. I am
sorry when I detect, as I sometimes
do, when I kiss certain favorites of
mine, the odor of smoke on their
breath. It gives me pain! Yet I
can sec whence comes the want of
the boy and why he finds such an
irresistable. temptation and charm
in somethirig'to' smoke. He thinks
it is manly. The very father whose
commands are laid upon him not to
do it,, regales himself after dinner
with acigar, or sits and reads the
evening long, in, to the boy, a -de
lightful .and; .romantic wreath of
smoke. His brother, who has come
homo from college, crowned with all
the splendor of the conquering hero,
tells of class ceremonies in which
the pipe playes no mean part. Very
likely .his day school teacher has
been seen walking home with a ci
gar in his mouth, and his Sunday
school teacher, who stands of course,
on a pedestial, wears clothes that
are odorous telltales. What are
we, that we expect from the sons,
virtues for which the fathers are not
strong enough? Why expect the
boys to eschew, what to their appre
hension, is a bdage and sign and
seal of manliness?
Gentlemen, if you don't want the
boys to smoke, don't smoke your
selves. .That will be the very best
way to keep them from it. A boy
forms himself upon his father's
model. The tricks of attitude, the
tones of speech, the mannerisms ol
the one, grow into and with the oth
er. The better the man, the better
will oe the boy! A father who 13
habitually courteous, will have cour
teous children. One who is pure in
speech, will scarcely need to watch
for profanity in his sons. Whatever
graces are desirable in boy-nature,
are especially to be sought for in
manhood and maturity.
Earnestness.
The present age is characterized
by intensity. Civilization, instead
of claiming our spirits, stimulates
them in to great activity. Business,
pleasure, the learned professions,
literature, and all the arts of life,
bear witness to our hurried earnest
nesss. We bend the bow to the
Dreafcmg point. Our hearts pant
oecause 01 tne rapidity 01 the race.
This intensity of life has its first
and deepest cause in our spiritual
wants, in the thirst and hunger of
uie soui. tv nen evening is come,
and the child is tired, he desires
this thing, then another, after that

them alf, he weeps for something
else. But it is rest and sleep that
he wants rather than toys for which
he sheds so many tears. So of men;
there is an inquietude in their
minds, the cause of which they do
not underttand. They suppose that
if they could possess riches,or com
mand the pleasures of the world, or
obtaingd'the knowledge, the office,
the social position, or the fame for
which they long, all .would be well
with them. But they are in error
ior mcir restlessness has its origin
in their spiritual instincts. It
'the peace which passeth understand
ing,' the rest which is found in God
alone, that they need, although they
sumv it n oi.
Let this encourage the preacher
to declare his message of love. Let
his preaching be according to -the
truth, and in the spirit of these
words, and he shall not speak in
vain: 'Come unto Me, all ye that
labor and are heavy-laden, and
will give you rest' It is true, alas
that all will not believe it. Like
Jfilate,some will askWhat is truth!'
and then pass on to ''hear some new
thing;' aud Festus will deliver his
judgment by telling the preacher,
'Thou art beside thyself.' But sin
cere, humble, burdened souls.moved
by the Spirit of God. will receive
Christ, and go on their way rejoic
ing.

CHICKEN PIE.
who is, by the by, an excellent cook,
criticised the chicken pie at the
pic-nib. I thought it very nice in
deed the meat tender and well
seasoned. But she thought there
was not gravy enough.
In our country, this meat would
be entirely surrounded with a little
of the chicken jelly."
"And you don't put a cup in the
center?'1
"Never in a meat pie. You see.
the gravy runs up into the cup, and
when cold forms a jelly there, where
as you want the jelly around the
chicken or veal, or whatever it is."

How do you make a pie?'
If the chickens are young, 1
joint them' and scasonwithrwIiite
pepper and salt, sprinkling a little
over each piece. I do not stew them,
but arrange the parts in a deep
earthern pie-dish. After the meat
is all in, I place a few bits of butter
on top, and pour in enough cold wa
ter to nearly cover the meat A. lit
tle pounded mace is an excellent ad
dition. I now put on the pastry
cover, pare the edge, and ornament
as X thing best, it must be in a
moderate oven for an hour and a
half to two hours. When the pas
try, is done, the oven-door may be
left open, or a brown paper laid on
the top of the pie. I never put' in
the breast-bone or the back and
neck. If these arc boiled down
with a bit of bacon or a ham bone,
the gravy will be nice to put in the
pie alter taking it from the oven, to
supply the waste made by cooking."
I think there is hardly anything
nicer than an out-rashioncd
Pumpkin Pie, and. my English
friend, for a wonder, thinks they are
good, and has asked me to tell her
how I make them. I cut the pump
kin into thin slices, and boil it very
tender in as little water as possible.
When nearly done, be careful ltdocs
notburn, as it is apt to do SO. When

pumpkin steam or dry on the bacK
of the stove for ten or fifteen mm
utes. Now mash and rub through a
sieve. The more milk yon put to
it the more eggs you .will require.
and the less milk the less number of
eggs. A quart of rich milk to a
quart of pumpkin, and three or four
nutmeg arc my favorite spices
though many like cinnamon and
cloves. ,Sugar or molasses may be
used lor sweetening. 1 use sugar
in proportion ot two heaping table-
spoonfuls to a pie. You must have
a very not oven ior inese pies, as n
is duhcult to brown them without.
It is a good plan to heat the batter
scalding hot before putting it in the
pie.
Winter Grazing.
This term will strike the Eastern
reader unpleasantly, for it is asso
ciated in his mind with bare fields,
stacK-yaras, irozen earth, and shiv
ering cattie. In the trans-Missouri I
country, we have a vast region
where wintcr'grazing is a Cxed fact,
without any of the disagreeable ac
companiments of the rainy and
snowy climates east of the Missis
sippi. The eastern limit of this
climate is about the 98th degree of
longitude west Irom Greenwich,
which crosses the Union Pacific R.
R. near Grand Island. Nearly all
the country west of this line, ex
tending from Texas far into the!
British Possessions, is one vast nat
ural pasture the year round. The
climate is not well understood by
many of our Eastern people It I
is entirely unlike that of the At
lantic -aud the Mississippi Valley
States, Judged by our standards
at the East, four fifths of this region
would be uninhabitable on account
of its elevation above the sea level.
On this -coast, seven thousand feet
would be about the snow line. In
the Rocky Mountains it is nearly
twice that hight. They have good
summer weather in its season at ten
thousand feet above the sea level,
and it is. only the cool nights that
make the raising of Indian corn im
practicable. The terminal line of
vegetation on the White Mountains
is about 5,000 feet, on the Alleghan-
les O.500 feet. The erasses grow
luxuriantly on the Kocky Moun
tains up to ten thousand feet, and
we have seen a heavy growth oftirh
tier on iriKe s "eaK, and on other
summits, as far up as 12,000 feet,
and a smaller growth of evergreens
15,000 feet high. In the North.
South, and Middle Parks, eight to
ten uiousana leet above tne sea level,
the winters are less severe than in
the Atlantic States. The rain fall
over the greater part of this region
is about twenty inches annually, and
the larger part fallsjn, the month of
Jiay. mis gives tne grasses a vig
orous start, and in June, they. are
muy matured, ay tne 1st ol Sept.

fectly cured hay, as nutritious as
any the Eastern farmer puts into
his stacks or barns. The proof of
its excellence is tne lact that thou
sands of sheep and cattle feed upon
it all winter, and come out in the
spring ripe for the outcher. 'There
is none of that pininr which is in
separable from all put door feeding
in winter in the Eastern States.
There arc not only the "bunch" and I
gramma" grasses, but the species
are numerous, and every valley has
its complement of them. This lact I
of abundant fodder for all grami
nivorous animals is as well estab
lished as any fact in our agricul
ture. It-is this which makes this
vast region so attractive to the
