D mur 18ftf BITTER MAKING. Fine blitter is made in various ways; and it would be a public benefit if a uni form rule could be discovered and follow ed by all in the manufacture of butter. However, this would not render all butter of the same quality, so long as the quali ty of milk is so different. Breeds of cows —different grasses—and other feed—will always continue the difference in milk. Hence we may always expect to find upon the market the different grades of butter usually quoted. The three following modes of caring for milk are principally followed in this .Skate 1. The milk is strained into pans and set on racks or shelves in the milk-room. 2. The milk is strained, and set in pails in which a'small quantity of sour butter milk is put, to hasten the souring of the milk. When this is sufficiently effected, the milk is churned. 3. In the creameries and many of the large dairies, the milk is strained into pails about eight inches on the bottom and not far from twenty inches high. These pails are then set into vats differently construct ed, into which flows a stream of cold water, which is allowed to rise nearly tc the toji of the pail and then flow out ol the vat, so there is a constant flow of cold water around the pails. Twenty-four to forty-eight hours is a sufficient time for the cream to rise. It is then dipped off, the cream allowed to stand until slightly sour; and churned. The same process is sub stantially followed by those who use the large square pan and adopt the cooler sys tem. Good ImttiT may bo made by either ol the above modes of handling the milk, ltut iu either case great cleanliness and care are to be observed. Where the pan system is in vogue, the milk-room should be so constructed as to admit free ventila tion, regulation of temperature and light. Direct sunlight should never fall upon the milk neither a brisk current of air should pass over it. Both rapidly dry the cream upon the surface, and convert the surface into a tough, skinny sul st ance which can not be converted into good butter. The cream should be takeu otY the milk, so soon as the milk is changed or slightly sour. It should never be suffered to re main until spots ol mold appear on its surface, and whey arises at the side of the pan. Great care should be taken to pre vent an\- had air to reach the milk-room, as both milk and cream rapidly absorb “bad air,” and when it prevails good but ter cannot be made. The old fashioned dash-churn in some size is best. Churn ing should be done slowly, not over forty to sixty strokes per minute; and the milk or cream should be brought to a tempera ture varying but a little from 02 degrees of Fahrenheit. Churning should be thoroughly done. The butter should not bo removed from the churn until it is com pletely “gathered.” It should he worked into a solid mass in the churn by tlm use of the dash: so that when taken out there will remain but a small quantity of butter milk to be worked out. A large majority of dairymen wash their butter, and it is the best practice if you have soil water. Butter should be worked by pressure, whether it should be done with the liand ladle or any kind of butter worker. The washing and working should be continued until all the butter-nnlk is removed. The butter should then be salted. For every twenty pounds of butter, use one pound of sifted, tine dairy salt. Work it care full and evenly into the butter, and pack immediately. The practice of salting butter and lettiug it stand twelve to twenty-four hours, and then working over and paekiug, is not only unnecessary, but damaging to the quality of the article. “What isouee well and properly done is better than twice ill done,” applies in this case. The second working renders the butter “salvy.” It breaks down the “grain” of the blitter— and tits it for grease. Those who have practised the above mode of working and salting their butter will not go back to the old mode. They say it is the only way they can put down their dairy and feel sure it will come out all right n't the end of the season. Cor. Chenango (*V. F.) lie publican. MK8. LEAKY’S COW. The telegraph brings ns the mortifying intelligence that Mrs. Leary denies posi tively that her cow kicked over the lamp which set lire to the stable and burned down Chicago. It w ould certainly bo ex traordinarily mortifying if it were true, but, happily, we are in a frame of mind to disbelieve that it is true. Mrs. Leary declares she was asleep at the time the lire broke out. Then how does she know that her cow didn’t kick over the lamp Docs she pretend to say that she can be asleep in one house and tell at the same time what her cow was doing in another? If she can't, what the thunder is she talk ing about? Besides, she lias no right to deprive the cow of the immortality she won by that historic kick. Suppose old Mrs. Krostratus had denied that her son had fired the Ephesian dome Suppose the mother of Nero had denied that lie had set tire fo Home in order to secure an abundance of light for his amateur concert in the tower? .Suppose the owner of the world-renowned goose had deiced that her domestic fowl had saved the Eternal City by its warning quack What would his tory be worth if it were suffered to be plun dered in this disgraceful way No, no, Mrs. Leary, that game won’t win. Your renowned cow did kick over that lamp filled with liou-combustible kerosene, and you needn’t deny it. You may have been asleep at the time—it is very likely you were, for l) o’clock at night is a singularly late hour for you to lie up and abroad—but that fact alters the iden tity of neither the cow nor the kick. You had better yield gracefully to the inevita ble and let your cow pass into history, which she is bound to do, whether you yield gracefully or not at all. You had better keep your mouth shut, in fact, and let your name be handed down to posterity along with hers upon the tongues of men. This is, perhaps, your last chance to see your name upon the historic page a hun dred years lienee, and if you don't avail yourself of it, you ough to sell out to some more enterprising somebody that does. If you deserved to be called a citi zen of Chicago, you would have had your cow photographed long before the tire was extinguished, and would have been selling the pictures all this time at twenty cents apiece. Do your business and then go home. If your business is play, play and make a business of it. I like to see boys play good, earnest, healthy games. If I were the town, 1 would give the boys a good, spacious play-ground. It should have plenty of soft, grijen grass, and trees and fountains, and a broad space to run and jump, and to play suitable plays. I would make it as pleasant, as lovely as it could be, and 1 would give it to the boys to play in, and when the play was ended I would tell them to go home. For when boys hang around street comers and the stit hies, they get slouehy and listless. Of all things, I dislike a listless boy or girl. I would have a hundred boys like a hun dred yachts, with every spar straight and every rope taut, the decks and sides clean, the rigging all in order and every thing ready to slip the cable and lly before the wind when the word comes to go. But this cannot bo if you lounge about the streets and loaf about the corners and idle away your time at the stables and saloons.
